Black Bean Aioli

This dish makes a delcious accompaniment to bread dishes, makes a perfect dip for chips.

It keeps for up to a week in the fridge.

It has protein, fiber, potassium, folate, vitamin B6, and phytonutrient content, coupled with its lack of cholesterol, all support heart health.

Ingredients:

1 tin black beans 

3 medium mushrooms

4 cloves garlic

Garlic powder 

Pinch of black pepper 

2 pinches of salt 

Oil for cooking lightly 

Olive oil, red chilli flakes and za’atar to garnish

I used it as as topping for garlicky potato discs and olives.

Method:

1) Lightly fry the rinsed beans with the garlic (both fresh and powder), black pepper, salt and roughly chopped (you can actually just smoosh with your hands) mushrooms for 5 minutes until soft. 

2) Then blend until smooth. 

3) Garnish with oil, za’atar and chilli flakes or garnish of choice. 

 

This dish is well suited to those with physical disabilities or those who want easy deliciousness as it involves blending. If you have a severe physical disability that stops you being able to reach the hob safely, do get assistance.
